grilled korean bbq marinated lamb kabobs
ingredients
- 4 cupslamb legcut into 1 ½ inch cubes
- 1 ½ cupsKorean BBQ Sauce
- 2 red onionslarge diced
- 1/4 cupItalian flat parsley
- 1/2 cuproasted tomatodiced
- 1 cupMinted Tzatziki(see below)
directions
- Place lamb in bowl and add Korean BBQ Sauce, making sure it is covered with the marinade.
- Cover with plastic wrap and refrigerate for a minimum of 2 hours or up to 2 days.
- Skewer 3 or 4 pieces of lamb onto skewers alternately with sections of onion.
- Place the skewers on the hot grill and cook for 10 to 12 minutes or to desired doneness.
- Serve with Minted Tzatziki, parsley and tomato.
Minted Tzatziki
ingredients
- 2 tbspchopped mint
- 3/4 cupplain nonfat Greek yogurt
- 3/4 cupshredded cucumber
- 1 clovegarlicchopped
- 1 pinchKosher salt
- 1 pinchfreshly ground black pepper
directions
- In a bowl mix yogurt, cucumber, mint, garlic, and salt and pepper.
- Refrigerate until ready to serve.
