sticky spicy pulled pork and spinach sandwich

ingredients

  • 2 cups baby spinach leaves
  • 1 tbsp olive oil
  • 1/8 tsp red pepper flakes
  • 1 tsp chopped garlic
  • 1 pinch Kosher salt
  • 1 Potato roll
  • 4 tbsp Korean Hot Wing Sauce
  • 4 oz cooked pulled pork, warm
  • 1 slice sharp provolone
  • 3 slices bread & butter pickles

directions

  1. To cook spinach, heat olive oil in pan, add spinach and sauté until wilted. Season with garlic, red pepper flakes and salt. Remove and set aside.
  2. Cut roll in half and drizzle both sides with 2 tbsp Korean Hot Wing Sauce.
  3. Top with pulled pork, provolone, spinach and sliced pickles.
  4. Serve with your choice of side.
